Traditional art of brewing a Lambic Belgium Ale

I found a great article on the Wall Street Journal today on Lambic beer.  If you haven’t tried one, get to the nearest beer store and buy a Lambic.  The Journal’s article was on the Cantillon brewery in Brussels.  They do not taste anything like a traditional sweet-tasting beer.  In their ‘consumption – ready’ state, Lambic’s have a very unique and sour taste.  Brewing Lambic’s start out like all other beers, where you finish finishes in a few hours, but (to quote the Journal) “Only a few more years, and you could drink it”.
