Black IPA Moves to Secondary

After 16 days in the fermenter I racked the Black IPA to the secondary.  I had a little feeling, based on the sugar content of the wort (right out of the brew kettle), that it would take a day or two longer to ferment.  What I did not expect was a 16 day fermentation.  Maybe I should have made a larger starter.  If I brew this batch again, I will create a larger starter just in case.

The bitterness from the hops was very prevalent in my sample tonight.  It will be a little bit deceiving if you look at what you’re drinking.  There are still 2 more ounces of hops that need to be added to the secondary in a week.  I cannot wait to drink this beer!

Here are the beer’s specifics:
IBU’s (bitterness units):  132!!!
Original Gravity:  1.086
Final Gravity:  1.016
Total ABV:  9.17%

As of now, this beer is unnamed.  So, if you have any ideas please let me know in the comments.

Cheers,

Eric
